Pairings To Elevate the Way You Cheese

Whether you are planning a wine-and-cheese party, sake-and-cheese party or just want to select the right libation to enjoy with your favorite dairy indulgence, Green Scene will help be your guide with what works. Join Piccolo restaurant owner, Jim Andrus, World Class Wines Director, Chris Griese and Green Scene owner, Erin Haefele, for a fun and informative class where students will be guided through flavors and complexities of cheese, accouterments and libations.

Sushi & Spring Rolls with Melanie & Erin

Don’t miss this Springtime Japanese cuisine class where Melanie Rice will guide students in creating sushi & spring rolls.  Erin & Melanie will demonstrate steps in preparing your work area, sushi making steps and final preparation. Attendees will enjoy each prepared course. Rolling kit included!

The Magic of Handcrafted Spring Salads Made Easy with Kristin Melby

Join Kristin for a culinary exploration as we prepare and style great tasting, handcrafted salads to get us jump-started for Spring. In this class Kristin will guide students through greens selection, preparation, along with salad composition, maintaining freshness and texture. Students will learn how to utilize secret ingredients that add that extra wow to a salad and create great vinaigrettes and emulsions.

Mary Lien's Nourishing Traditions Cooking Series: Culturing Dairy & Meal Planning

During the interactive portion of the class, students will be guided through preparing Kefir, Curds and Whey, Butter, Crème Fraiche, Yogurt, Buttermilk and Pilma. As an extra treat Mary will provide the following menu items for everyone to try: Almond Crusted Salmon with Raspberry Butter Sauce on a Bed of Leaf Lettuce, Asparagus Soup, Spinach Stuffed Mushrooms, Doubled Eggs, Walnut Torte with Whipped Cream Icing and Blueberry Sauce, a Fermented Vegetable and Beverage.

Traditional European Cooking with Dalma

Discover wonderful food from the "Old country"! Join Dalma, local artisan baker and chef, as she prepares DalmatinskaPaticada, a beef and pancetta entrée with aromatic herbs, spirits and vegetables. Dalma will prepare gnocchi in its traditional form, as well.

Nourishing the Body Never Tasted So Good

Join Mary Lien, whole foods and traditional cooking chef, for an introduction to preparing nutritious whole and enzyme-rich foods. Students will prepare an enzyme-rich meal which will include a soup, vegetable, salad with fermented foods, a previously fermented beverage or use kefir and whey in a probiotic drink, a main course that usually includes a marinated Meat, a soaked grain and/or vegetables to be steamed and a whole food dessert. In this class Mary will demonstrate:

  • Culturing dairy products: kefir, curds and whey - Fermenting vegetables & Meats
  • The importance of blanching vegetables
  • Fermenting beverages: Kombucha
  • Sprouting

Hints, Tricks and Tips For Holiday Entertaining

Learn chef secrets that make cooking easier, more delicious and pull a meal together. During this class, Kristin will provide students with the how---to’s of preparing the chef’s pantry, preparation timing of courses, and preparing accompaniment holiday libations. Students will participate in making one of the courses and enjoy sampling prepared recipes.

Seasonal Soup Making

Discover the wonderful world of soups. Explore ingredient selection, flavor profiles and texture building. In this class students will be guided in making a variety of soups suitable for any occasion. Chef Kristin will demonstrate the soup making process and share savory recipes. Students will enjoy tasting prepared soups and take home prepared recipe selections.

Hors D’oeuvres for Festive and Formal Gatherings

Join us for a two hour demonstration class, where Chef Kristin will prepare healthy tailgate party options and elegant dinner party canapes . In this class Kristin will illustrate ingredient selection and preparation, students will enjoy sampling each hors d’oeuvre and take home recipes.

The Art of Nutritious, Flavorful Juicing and Smoothies

Discover how simple and affordable healthy eating can be by participating in Erin and Sarah’s upcoming smoothie making class. In this class Sarah will demonstrate three smoothie recipes, students will prepare one of the smoothie recipes and enjoy tasting a variety of delicious smoothie creations.

Learn the art of cheese-making. 

This is an introductory class taught by Sari Mabbett, a local artisan who has been hand-crafting cheese for over 15 years. This class is fun for all ages and will include a demonstration and all supplies for students to make Mozzarella and a choice of Ricotta, Panere, or Queso Blanco cheeses.

Make your own Cleaning Products. 

Ever wanted to learn how to clean with pure soap? Take this class and we will teach you how to make everything from an all purpose cleaner, to fireplace cleaner. All with the same green product, Pure Soap Flakes! Join Christine Jones and take home lots of recipes and samples for a green and clean home!

Gluten Free Cooking Class, Pizza Dinner. 

Join us for a two hour hands-on class, in making your own gluten free pizza. We will share our delights with the class in this roundtable of pizza making. Be prepared to make a variety of pizza's, from appetizers, main dish pizzas, to a delicious dessert pizza. Come hungry, as we will end with a delectable dinner for all. We are excited to welcome Vickie Daniels into the Green Scene Kitchen to teach us the basics for gluten free pizza dough.

Create Your Own Natural Spa Products. 

Learn to make handmade spa products (Bubble bath, manicure and pedicure soaks) from scratch, with Christine Jones, a local artisan who specializes in natural cleaning products, hand-made soaps, and spa products. We will be making fun creations perfect for Valentine's gifts. Take your creations home or give them as gifts.

Knife Sharpening. 

Dan Coleman, from DFC's Cutting Edge Knife Sharpening, will be at Green Scene to sharpen knives. He will also have kitchen knives available for sale.

Gluten-Free Cooking.

 In this hands-on class, Candice Ihrke will guide students in baking gluten-free Angel Food Cake, Dill Batter Bread and she will share helpful baking tips for converting your favorite wheat recipe to gluten-free ingredients that taste great. Each participant will take home a portion of the prepared gluten-free creation and a wealth of gluten-free foods and cooking information.

Annually at the Women's Expo

Don't miss the annual, Free Admission, Women's Expo, located at Northern Lights Casino. Erin will be demonstrating various Green Scene deli favorites. Bring a friend and bring your appetite to try some delicious creations.
